I LOVE OYSTERS

I was reading bon appetit today and came across a good article on oysters by Eric Steinman.  Oysters are one of my favorite foods and I thought I would share some tips on picking out the perfect batch.

What should an oyster taste like?  Like the sea, or to quote the French poet Leon-Paul Fargue, "Like kissing the sea on the lips".

Are oysters considered a sustainable and green food?  Oyster farms are beneficial to estuaries, and oysters eat algae, which helps clear the water.  Also, shell beds provide a habitat for many small species.  Oysters are considered a keystone species.

What should one look for when buying oysters?  Oysters in the grocery store should have their shells tightly closed.  They should feel heavy for their size, like fruit.  Avoid any that sound hollow when tapped.  By law, there must be a tag displaying when the oysters were harvested.  Ask to see it, Look for oysters that have been out of the water less than a week.  They should smell fresh, if they don't, don't eat them.

Is it true that one should only eat oysters in months that contain the letter "R"?  Today, with farmed oysters and monitoring for pathogens, you can eat oysters year round-BUT they still taste best in fall and winter.

Eating raw oysters on the half shell can be difficult without appearing awkward.  How does one maintain a sense of decorum and grace?  You have to proceed with confidence and make carnality an asset.  Think like a predator.  Grab the shell, raise it to your lips, tilt your head back, slurp the oyster in, and give a few chews to release full flavor.  The little cocktail forks are a disaster: save them for the Vienna sausages.

My mom, Debbie

Mom yesterday during the big ICE STORM

My mom wanted to share a video of the Scrabble War she attended last Saturday. She was so excited to be on tape and wanted to show what a wonderful event it is. It's held by the Literacy Council of Benton County. She's at the very end of the video, her group won the SPIRIT AWARD...as you can see their all wearing cone hats. She's the one waving the heart around :) The link is below:

Mom, Memaw, and Joe start their move in 5 DAYS! I can't wait to have them closer! Please pray for them to have a safe trip down.

Meet my new aqua kids

Over the weekend I completed one of my New Year’s resolutions, to get my “catch all” room organized! I DID IT! Before and after pictures are coming soon! To reward myself I bought a fish tank, I went in to get 1 fish, and came out with a 5 gallon tank and 4 little slime kids. I have placed it on top of my new shelf and it fits perfectly.

New shelf

Meet Mr. Koi Japan...he is very shy

Here is the fish Jim picked out, it's PINK :) I'm so proud of him. He named him Lucky

Chanel, she's very classy

She even posed for the camera, isn't she cute.

First let me start off by saying I'm sorry Ikea Blob man, I must have been in a bad mood because last night I couldn't have gotten the shelf up with out you.

Now the organizing must began! When I'm done I will post before and after shots. Have a great weekend!

Update on SHELF

I started putting together my new shelf last night, I pulled all of the pieces out and looked at the directions. YES I LOOKED, I had to, there was so many pieces I didn’t know where to start. So, IKEA directions have NO words, they have pictures…well just see below.

As you can see the little blob man doesn't think it's a good idea to assemble alone, I tried but I need 4 hands to finish. SO I didn't get the damn thing up...maybe tonight!

Why?

One of my New Years resolutions was to become more organized and to de-clutter my life. Well, I purchased this bookshelf at Target for my office/craft room to help me with the organization. NOW, you must know 2 things…1) This shelf came in a box, so you must assemble this yourself….2) I don’t read directions, I swear the Chinese type them out knowing their screwing with my head…so I assemble things on my own terms.

Halfway into assembling this lovely shelf, I started having problems trying to fit the steel rods into each other so I yelled for Jim’s help. To make the story short we get it up, as I’m picking it up to place it into my office it crumbles apart in front of my eyes. I get aggravated, “NOT PISSED” and re-assemble it, which takes another 30 minutes. So now it’s in, I have everything secure and start the transfer again…IT FALLS APART AGAIN this time slamming into my desk and bending the steel rods. NOW, at this point I’m pissed...I started screaming, I tried to break the hammer in half with my knee, Jim hears and comes to the rescue…he then assembles the damn thing for a third time. SO, we get it up again…this time try something different, I have Jim help me pick it up to transfer it into the room…we get it in the room… it looks so nice, all my hard work finally pays off…Jim and I high five each other, we walk out and about 2 minutes later we hear this horrible noise…I’m thinking, Son of A BIT****…that better not be my new shelf. I run in and there, and it is, laying in pieces everywhere…one of the pieces had went through the wall, so now I have to repair a hole the size of a notebook. I swear this damn shelf took years off my life, it has made me so mad…it was a nightmare.

Bear reading the directions

Fast Forward to TONIGHT

Tonight is the night I will assemble my “NEW” shelf. I pray it’s smoother and it doesn’t ruin any of my furniture or walls. I will post pictures of it, it’s much nicer and I’m sure it will be a lot easier to assemble…wish me LUCK! Because I can’t take anymore problems this week.

February

February is approaching quickly! January has been nice and relaxing but things will be changing in 11 days. I have my mom, Memaw, and Joe moving down February 1st, which I’m very excited about. I haven’t lived near mom since I was 19 and it will be wonderful to have family dinners, go shopping with my mom and memaw, and do family things again. I can’t tell you how many things I have on the list to show all of them. I think they will love Florida and I know it’s going to be a great move!

Next is my trip up to Tallahassee. It’s been over 4 months since I have seen Brandi and I’m dying to see how her pregnancy is coming along. I’m still shocked that she will be a mother in 6 months! I’m anxious to get started on her baby’s room. Just for the record, I think it will be a girl, but their already calling her belly HANK..we will see!

Brandi and I back in October (A month before she got pregnant :))

Then last but NOT LEAST, my girls trip to VEGAS. I can’t tell you how excited I am for this trip. I’m finally meeting my 2 best blog friends, Lesli and Allie. We all three feel like we have known each other for years but we have yet to meet face to face. I know this will be a wonderful time and I’m counting down the days like a kid counts for Christmas. GIRLS I CAN’T WAIT!
Can't wait to take pictures so we can have one of all 3 of us! :) For now, this will have to work

Last night was my first time to use SKYPE. Brandi has it and asked me to sign up so we could video chat, and last night was our first session. It’s AMAZING! I now can watch her belly grow! We had a blast and I can’t believe how far technology has come. I always think back to my great grandfather who never had a computer. We’re so lucky to have these luxuries…love you B can’t wait to SKYPE again!

(Brandi and I on SKYPE)

Skype is free, all you need is a web cam and a screen name and your own your way to a virtual conversation. Now I must get all my out of state friends signed up. I recommend you reading up and trying it out, it’s worth it I promise.

Screwpull Black Nickel Wine Opener

This is my favorite wine tool. I swear it's the smoothest way to open a bottle of wine. No more breaking corks again!

Description: Le Creuset's Leverpull streamlines the removal of a cork from a wine bottle. Its rotation technology reduces the process to one simple up-and-over motion. The opener is designed to perform well with any size or type of cork, including plastic corks. Made of a zinc alloy with a black nickel-plated finish, it features a comfortable handgrip. A foil cutter and leather storage box are included.

Here it is!
Foil cutter
Pulls it right off with a clean cut, it's magnetic so the foil stays in place

Stick it on top of the bottle

In one motion pull it from one side to the other...like this

POP, it releases the cork :)

Finished!

Pour your wine and enjoy!

Lipstick Jungle Night

It’s the Season Finale of Lipstick Jungle! Lori and I are making a night out of it. After work we are headed to Ocean Boulevard a store that sells every type of purse and jewelry imaginable, and then we will go to Ocean Prime a restaurant on Sand Lake. Lori says the food is exquisite, I’m sure it is. After our dinner we will watch Lipstick Jungle with wine glasses in hand. I love Lori’s home, it’s on the 4th floor and looks over Turkey Lake, it reminds me of a condo in Sex in the City for some reason, I think it’s her zebra pillows she has thrown on her couch. I will take pictures and I hope everyone has a lovely night.
I took this picture below a couple of months ago at Lori's house..it's the PILLOW

Here is Lori on "THE PILLOWS" :)

The Secret

I have this secret place that’s hidden in Orlando. When your there you feel like your in another world. It’s beautiful, I have been dying to share this with someone, and now I can, my mom. Last night I received a call from her, “Ryan are you sitting down?” ME: YES, “WE SOLD THE HOUSE!” I was shocked, I couldn’t believe that my mom has finally sold her home and she is moving down to Florida to be closer to me! Now I can finally share the stunning spot with someone that will appreciate it. I’m really excited; I know it’s going to be a hard move for everyone, my grandma, mom’s husband Joe. I pray that it goes smoothly and Joe finds a great job. Their moving in with US until they find the perfect home to buy, I’m sure it will be close quarters but will manage, it’s only temporary. I have so many things I want to do with my mom and grandma, please pray that their moving is safe and smooth. I will update as the move goes on. Their closing is in 20 days!

P.S. I posted SALE OF MOMS HOME on the vision board at work yesterday morning, it’s starting to freak me out it works so well!

P.S. #2 to all my close friends, don’t worry, when you come down to visit I will take you to the “Secret” spot, you will LOVE IT! Hint #1: bring your bathing suit Hint #2 Be ready to relax Hint #3 It’s FREE

The List

I was soaking in the bubble bath last night talking on the phone with my friend Allie, who was also soaking in the tub. I swear the sweet smell of the bubbles and hot water must have gotten our minds going because we talked about so many neat things that we want to do in the coming years, hopefully this year, but next year would be fine as well. She told me about this really neat dinner called, Outstanding in the Field, which I had never heard of it. It was so interesting I didn’t know I had turned into a prune by the time we were finished talking about it. Here is a brief description:

Outstanding in the Field’s mission is to re-connect diners to the land and the origins of their food, and to honor the local farmers and food artisans who cultivate it.Senses are heightened in the fresh air. And it's not every day you get to sit next to the person who planted the beans, raised the lamb, and shaped the cheese on your plate.Jim Denevan, FounderOutstanding in the Field is a roving culinary adventure - literally a restaurant without walls. Since 1999 we have set the long table at farms or gardens, on mountain tops or in sea caves, on islands or at ranches. Occasionally the table is set indoors: a beautiful refurbished barn, a cool greenhouse or a stately museum. Wherever the location, the consistent theme of each dinner is to honor the people whose good work brings nourishment to the table.Ingredients for the meal are almost all local (sometimes sourced within inches of your seat at the table!) and generally prepared by a celebrated chef of the region. After a tour of the site, we all settle in: farmers, producers, culinary artisans, and diners sharing the long table.

This sounds so amazing and this is going on “THE LIST”, Thank you ALLIE!

Another thing that’s on “THE LIST” is having a beautiful candle light Thanksgiving with friends…the night would be filled with great food that would take all day to prepare and fancy cocktails. We would decorate the table like Martha Stewart and use creative place cards. It would be just like this:

This idea originated from Allie and Lesli, it sounds like a plan and I can picture it right now.

Thank you for the wonderful idea’s girls! I’m posting the FULL list on my right-hand column and hopefully we will be able to scratch some off soon!

Clutter

Desk Pictures Before

Desk Pictures AFTER

One of my New Years resolutions is to become more organized and to de-clutter my life. I started at my desk here at work. I have had mountains of paper for months scattered everywhere and now that they are all filed away and organized I feel so much more relaxed and comfortable. I was browsing the Internet looking for guides to help me tackle a bigger task, MY HOME and I found this article below on About.com:

Clutter: most of us have a little of it here or there. In fact, many of us have more than just a little: According to a poll conducted on this site, over a third of readers avoid going home because of the overwhelming mess and don’t know where to begin cleaning. (In contrast, less than 10 percent say their homes are clutter-free.) How is all this mess affecting us?

Time: People often think of clutter as an energy drain, but it also drains us of our time. How? People in cluttered homes spend extra time virtually every day looking for lost items such as keys, money, shoes, tools, etc. Even when we’re looking right at the lost item, it becomes difficult to see it when surrounded by clutter--and the extra time it takes to search through the mess adds up quickly.

Money: When we don’t have bills and financial papers organized, bills can get lost, causing us to accrue late fees. Replacing lots items, and buying duplicates of those we didn’t realize we already had, can also carry a cost that adds up quickly.
Stress: The most obvious toll that clutter takes is added stress on one's life.

Here are some examples of stress clutter can cause:

· Having guests over becomes an embarrassment, or an event that takes all-day preparation.
· Each room carries visual reminders of all the work that needs to be done in the way of cleaning.
· Using your home for activities like scrapbooking or
yoga becomes difficult or impossible without taking significant time to clear the space.
· According to the principles of
Feng Shui, clutter drains you of your positive energy. You can actually feel it.
·
A cluttered home, rather than a haven from stress, is a big stressor in itself, and intensifies the frustration and exhaustion that an already-stressed person feels.

What’s a Realistic Level of Clutter? For most of us, especially for parents of small children, it’s not realistic to maintain a home in perfect order every moment of each day. While it’s inspirational to thumb through catalogs that show beautifully furnished rooms or walk through a wonderfully un-cluttered model home, holding oneself to such high standards of neatness may not only be unrealistic, but can cause additional stress. For example, if you find yourself nagging or resenting other family members for the minor messes that they make to the point that it strains family harmony, you may need to relax your standards. But knowing the toll that clutter takes, how much clutter is too much?
While we know that piles of clutter can cause stress and a perfect home may be unrealistic for some people, the level of tolerable clutter may vary from person to person.

Here are some guidelines to follow to help you decide where you should draw the line on clutter:

· Company: Do you like to have your home neat enough to have drop-in company? Are you happy to be company-ready after 15 minutes of cleaning?
· Organization: Is your home organized enough that you can generally find everything you’re looking for without having to search?
· Stress Level: Can you truly relax in your home, or is it an energy drain?

I have purchased some book cases, a garage organizational kit, and many clear tubs to get me started on my HOME…I can’t wait until I can set in my office/craft room and enjoy myself instead of cringing every time I walk in. Before/After pictures will be posted soon. One more NOTE, I must organize our garage because I’m adopting two dogs at our local shelter, it is one of my new years resolutions, there has been so many dogs that have been put down due to the horrible economy and we have 5 acres that our spoiled furr terds rarely use since they have the lavish life of living inside…I’m giving the future corn chip kids our garage as their doggy house so they can have the best life possible. I can’t wait to meet them!!
