Ceviche Recipe


The first time I tried ceviche was in Cabo San Lucas last year. We were out on a boat deep sea fishing. I had been throwing up for hours, and the boat captain pulled out this cool whip container and said, “You must try this.” Thoughts ran through my head…is his wife a clean cook? Did he make this himself? How safe is it to be eating raw fish in Mexico? After my first bite I was hooked. It was the greatest thing! The flavors were bright and delicious, and my sea sickness went away in a flash because all I could think about is this fresh ceviche! He made his with fresh mahi and shrimp, so when Jim brought home all the fish last week I knew this is something I needed to attempt to make! This was my first batch of ceviche, it was simple and it turned out wonderful! I’m telling you that this is a must have recipe. It’s perfect for hot summer days. You can serve it with tortilla chips or tortillas. Here is a brief description of what it is, and the recipe follows…ENJOY!

An appetizer popular in Latin America consisting of raw fish marinated in citrus (usually lime) juice. The action of the acid in the lime juice "cooks" the fish, thereby firming the flesh and turning it opaque. Onions, tomatoes and green peppers are often added to the marinade.

1.5 pounds shrimp (I used half shrimp/mahi mahi)
5 large limes, juiced
1 large lemon, juiced
1 small white onion, chopped
1 diced Avocado (optional)
1 large tomato, coarsely chopped
1 jalapeno pepper, chopped
1 bunch cilantro
1 tablespoon olive oil
1 tablespoon kosher salt
ground black pepper to taste
2 minced garlic cloves
In a large glass or ceramic bowl, gently toss the shrimp and scallops with the lime juice and lemon juice. Mix in onion, tomato, jalapeno, garlic, cilantro, olive oil, salt, and pepper. Cover bowl, and chill ceviche 3 hours in the refrigerator, until shrimp and fish are opaque/solid white
