Have you ever seen a dog that smiled

This morning I woke up to a grinning dog. He was happy this morning, he must have been dreaming of steaks and Italian food or was happy he took Jim's place. He was so happy I couldn't say no to taking him into work today. He loves car rides and this is how he sits while in the car...looking straight at me. For some reason lately Bear has been attached at my hip. I can't go to the bathroom without him being there with me. He trips me while I'm trying to cook and if I'm sitting in my chair watching T.V. he has to be right there on my lap. He isn't a tiny tot so it does get uncomfortable but you just can't turn him down.
Harley and Velvet are not car dogs. Velvet hates it and Harley is so worried about his surroundings that it's uncomfortable for him. So Bear gets to be the lucky one and work with me today. Right now he is below my desk sleeping. He loves coming to work only if he could file or do something, I would rather work with him then anyone else.

Gone Again

Well, Jim is gone again. He left at 5:00 this morning for the Cajun Canyons Tourney in Venice, LA. I won't see him until Tuesday of next week. I enjoy being home alone, I can eat whatever I want, relax, watch whatever I want on T.V., and lounge around in a towel all night...but when night comes I hate it. I have a feeling I will be getting tired of this leaving for a week thing. We just have so many things to take care of, its not logical to leave that much all the time.

I leave for Biloxi next week, I'm excited to see Brandi but wish it were a couple of weeks out, I just need some home time and I hate leaving our dogs so much. At least after Biloxi we are home for a good solid 3 weeks...or at least I will be home for 3 weeks. We are so spontaneous I don't even know if it is 3 weeks, I guess I will just have to see what the weeks bring me.

I haven't seen my good friend Lori in over a month. I have dinner plans at Urban Flats with her tonight. It's always nice to catch up with Lori and I look forward to some good flat bread and a glass of wine.


I have to share this recipe with you, I will be making this for my weekend. It's wonderful, but I am a clam lover!



Ingredients
Serves: Serves 4

For the soup3 tablespoons extra virgin olive oil

1/2 cup diced onion (1/4-inch dice)


1/2 cup diced leek (1/4-inch dice)

1/4 cup diced celery (1/4-inch dice)


1 teaspoon minced garlic


1 bay leaf


Gray salt and freshly ground pepper


3 cups Chicken Stock or canned low-salt chicken broth


1 pound russet potatoes, peeled and cut into large chunks1-


1/2 teaspoons finely chopped fresh oregano


Dash Tabasco sauce


1/2 cup diced new or fingerling potatoes


1/2 cup heavy cream


For the warm clam salad


1 tablespoon extra virgin olive oil


1 tablespoon slivered garlic


1/2 cup dry white wine


1 pound Manila or other small clams in shells, scrubbed


Gray salt and freshly ground pepper


2 tablespoons finely chopped fresh flat-leaf parsley


1 cup packed coarsely chopped arugula or watercress



Directions Heat 2 tablespoons of the olive oil in a large, heavy pot over medium heat until hot. Add the onion, leek, celery, garlic, and bay leaf, and season with salt and pepper. Cook, stirring occasionally, until the vegetables are soft but not brown, about 10 minutes. Add the stock and russet potatoes, season with salt and pepper, and bring to a boil over high heat. Reduce the heat to a simmer and cook, uncovered, until the potatoes are very tender, about 15 minutes. Stir frequently to prevent sticking or scorching. Add the oregano.
Discard the bay leaf and puree the soup in a blender or with an immersion blender. Taste for seasoning and add the Tabasco. (The soup can be made ahead to this point and refrigerated for several days or frozen.)
Pour the soup into a large saucepan with the diced new potatoes, and slowly bring to a simmer. Cook, uncovered, until the potatoes are tender, about 5 minutes. Stir in the cream, heat through, then stir in the remaining 1 tablespoon olive oil. Taste for seasoning. Keep warm.
At this point, make the warm clam salad: Heat the olive oil in a saute pan over medium-high heat until hot. Add the garlic and sauti briefly until light brown. Add the wine, clams, and salt and pepper to taste. Cook, uncovered, shaking the pan occasionally to redistribute and turn the clams, until open and cooked, about 3 minutes. If you use clams other than Manilas, you will need to cover the pan while they cook.
Remove the opened clams to a plate with a slotted spoon. Give any clam that has not opened a firm crack with a pair of tongs or metal spoon, turn it in the liquid, and cook for another minute to see if it will open. Discard any that do not open. Return the pan to high heat and bring the liquids to a boil to reduce the cooking juices slightly. Add the parsley and arugula and stir just to wilt. Taste for seasoning, return the clams to the pan, and toss well to reheat.

P.S. I dont use Gray salt, and if you dont have some of the fancy stuff you dont have to add it.

A gift card for a rainy day

I saved my gift card I got during Christmas for a rainy day, 2 of the items I purchased were on sale! I am the biggest bargain shopper you will ever meet. I can't help myself, I have been trying to get better and have, but I still pinch pennies. I am slowly learning that you get what you pay for.

I love buying things online...it's something to do with having a package waiting on your doorstep when you get home. I love that!

Here is what I got:

Tripoli Server (I love the 3 tiered look, you can stick fruit, candy, etc...)



Asparagus Plate (we eat asparagus at least once a week)


and last but not least a Cupcake Tree ( I will be making fake cupcakes for display in my kitchen and when I have company I will replace them with real ones) Martha Stewart a couple of months ago made fake desserts for display, this will be my weekend project! :)

Crabie Pattie

Im having one of those days. Where Im just tired of everything. My yard looks like a jungle, Jim leaves again for another fishing trip, we leave for Biloxi next week, I just dont understand it sometimes. I guess I will be doing the yard work solo AGAIN this weekend.

I do look forward to seeing Brandi in Biloxi. Last year we had so much fun together. It's always nice to have girl time. While were up there we will be going to see Colective Soul, I loved them in the 90's and that's the last time I have listened to them. We both love concerts and thier the only ones playing the week were there. I do like them, it's just been awhile. Last year we went to Peter Frampton's concert. It was a blast even though we were the youngest ones there. The pictures below are of Brandi and I last year at the Peter Frampton Concert :)

Bubble Baths


There's nothing like taking a hot bubble bath, that is one thing I love and I have become addicted to it.  If I'm out of town I crave a hot bath before bed.  I can't sleep good without one.

The only thing is I cant take baths anywhere else except for my own home.  Its something about taking a bath in a hotel room or at someones home...I think of all the feet, butts, and pee that has been in that bath and I can't do it.  So last night I took my sugar cubes and enjoyed a nice long hot bath.  I have tried so many products to make the bath water smell fragrant.  I have finally found one that it perfect.  It's called Sugar Cubes...it makes the bath water smell sweet and has moisture pearls.  I can't wait till my next bath :)

Chocolate with Champagne and Tuna Steaks


There is nothing like sipping a cold glass of champagne on a hot summer day.  Kendra and I set outside yesterday looking out at the bay watching champagne bubbles and nibbling on warm chocolate, we loved it.  I never knew how champagne paired with chocolate but if you haven't tried it, its amazing.  It's better then the pair, wine and cheese.  This was our view for the whole day, we got to watch fish jumping, people jet skiing, kids feeding seagulls, it was nice and much needed relaxation.  


We got to the docks at 8 last night, the boys didn't weigh a fish in yesterday, but I did get to see this 500 pound tuna.  It took the angler 14 hours to pull it in.  Could you imagine fighting a fish for 14 hours straight...I barely can pull in a fish that takes 15 minutes let alone 14 hours.  This picture was taken while the angler was cleaning the tuna.

I bet this makes fabulous seared tuna steaks.  I was jealous I didn't have any to bring home and cook.  

Now I'm sitting in my chair with Bear and typing.  It will be a busy week at work.  Jim leaves AGAIN on Wednesday for yet another fishing trip!  I will be taking care of the mutts while he is out on the nice beautiful seas.  I will have to think of something fun to do.  I know yard work is in my future :(

Wolfe Bay Lodge

Yesterday I ate my first soft shell crab.  It was fried whole and when they served it, it was in the shape of a crab.  I never knew that they shed there shells and that you can eat their entire body.  It was delicious!  We also had fresh crab claws, shrimp, and a tuna steak.  There is nothing like eating fresh seafood while your at the beach.  

Now, Im sitting on the boat watching the guys rig bait.  They leave tonight at 10.  The seas are calm and they should have a fun and safe trip.

The Boat

Here is the boat I'm sitting on as I type.  The boy's leave out tomorrow night for a 2 day fishing trip about 100 miles out.  I will stay inland,  I hope they bring home the winning fish!  I will be on the boat until tomorrow night.

I look forward to some delicious seafood this Memorials Day.

Finally!

I finally got my hair highlighted today!  I'm embarrassed to admit, but it has been since early Feb since I have gotten in done.  I was LONG over due and it feels SO SO much better to have it fixed.  I have been holding out since I have been using a hairdresser in Tallahassee, FL.  I know, it's 4 hours away but she was great and my wonderful friend Brandi uses her and her hair is FABULOUS!  

Well, you know that morning when you wake up and you look at yourself and it's time.  I did that yesterday morning,  I woke up and looked at myself, I was shocked I have let it go for so long and I couldn't wait any longer...I called a couple of places on my way into work and someone was nice enough to get me in today...She did a great job.  At least this will hold me over until I get back up to my Brandi and hairdresser.  



I dedicated my day to beauty.  Before my hair cut I bought a new scale...I think my scale had bit the dust since every time I weigh in on it, it changes 10 pounds.  I couldn't take it any longer.  I also bought a bath pillow.  I have started taking nightly baths to relax.  I can't explain it but when I take a HOT bath before bed, it makes me feel so relaxed I fall right to sleep like a baby.  So I bought a pillow to rest my head in luxury instead of laying it on the hard tile surface.

Well, I'm off to the bath, I will let you know how my pillow works.  :)

Headed to the Beach this Weekend


I will be going up to Orange Beach, AL this weekend for the first Marlin Tournament. I cant believe it's already Memorials Day! Time flys by so quickly. After this tournament I should be home for a couple of weeks. I need it. I hate that I will be gone this weekend since I have been away for the Vegas Money Show and Jaclyn's wedding, but its the first holiday weekend tournament and I would hate to miss it.

Summer is Here!

Bear is now a scrawny rat.  We have to keep some hair around his face because last time we shaved his whole body he was depressed for weeks.  We have been shaving Velvet also,  she feels better when she is shaved and it's easeir for me to keep the house clean.  She sheds so badly.   

Yesterday was the first day it felt like summer.  The high was 95 and the sun was shinning bright.  There's nothing like a nice summer evening drinking some wine and grilling out.  I made steak shish kabobs with fresh zuchini, squash, onions, tomatoes, and eggplant.  It turned out great.  I also bought a watermelon yesterday from our local farmers market, it was sweet and delicious.  Watermelon reminds me of my young summer days living in Oklahoma.

Well, I'm making clams linguini tonight so I have to go get my sauce started.  I will let you know how it turns out.

Dry Lips?

I found these 3 years ago at the spa in Las Vegas.  I have made it a tradition to buy one every year.  I love them because they last forever, and it's easy to find in your purse.  You can also buy them online, but it's hard for me to pay shipping and handling on such a small piece.  Aren't they cute?  I even have one in Zebra print.  

I Was Worried


We got home after dark last night and I rushed out to the garden.  I just knew everything was dead since we hadn't been here to water anything.  I didn't have a flash light so I used my phone, it looked bad.  Everything was bent over, the pablano peppers were all shriveled up, my herb garden was drooping.  I came inside upset.  

I got up this morning to find living plants.  Some were ruined but most of them held up for us.  I was amazed!
I will be making some fresh salsa, we had over 15 red tomatoes, there is nothing like fresh vegetables from the garden.

Thank God I'm Home

I have been traveling ever since early this morning.  It took exactly 11 hours from hotel to our front door step.  The older I get the less I like to fly.  First it takes all day.  Second I hate the sick people coughing your way, for some reason I get grossed out and start thinking that their germs can't escape so there lingering all around me.  

Vegas was fun but a lot of hard work.  My feet are bruised and my clock is screwed up.  I know 3 hours isn't that big of deal, but I swear it takes a toll on me.  It took me 4 days to get used to Vegas time and on the 5th day I headed home, so now I have to get use to my Florida time again.  

I'm happy to be home and I look forward to picking my fluff ball of a son up tomorrow.  I have missed the doggies and I cant wait to snuggle with my baby Bear!  Bear will no longer be a fluff puff, we had him shaved for the summer, I will take pictures.  When he is shaved he resembles an over sized Chihuahua.

I wish I could stay in bed :(

I'm laying in the hotel bed waiting for dinner.  I have been standing in a booth since 9:30 this morning.  The Money Show ended at 6:30 and we have a dinner meeting at 7:30 so I have 1 hour to relax. My feet hurt and I'm not sure how much I have left in me tonight.  Last night I won a big $80 at the slot machine.  I'm not complaining, that's the best I have done...matter of fact it made my night.  :)  We ate at Bobby Flay's restaurant last night, it was FABULOUS!  It was a Mexican southwestern flare and I had veal chop with a horseradish maple glaze.  Tonight we are having Cafe Martorano, they have clips of gangster movies playing while you eat your meal.  Should be nice and loud, just right for a business meeting.  I can act like i can hear everyone and just smile and nod my head all night.  They serve Italian food family style.  My kind of meal.  You can try a little bit of everything.  Wish me luck!

Bye Oklahoma, We made it to Vegas

Well Jaclyn is now a new wife.  The wedding was beautiful even though the wind was blowing 40 mph.  It was a great time and a lot of hard work.  We got to Vegas yesterday, we set down to play 3 card poker and Jim got 2 3 of a kinds which pays out 30 to 1...which is rare.  I think I left up $5.00, and Jim left up $2,000.  Must be nice.  I haven't hit a jack pot yet so I'm due for a big win one day. Maybe it will be while Brandi and I are in Biloxi next month.  I'm crossing my fingers.

I will try to post some pictures when I get some time.  We have to set up our booth today and the show starts tomorrow.  I look forward to spending 9 hours on my feet tomorrow in a tiny booth.

I'm Packed and Ready

I leave tomorrow for Oklahoma.  It's always nice being home.  So many good memories.

Out with the old, in with the new

I am so upset with my bank I had my car loan with I could drive down to Ft. Peirce and kick somebody’s ass. It’s sickening on how horrible there loan and customer service is. I paid off my car loan yesterday since I finally sold my CAR! And they wouldn’t talk to me since they thought I was a male, due to my name. Ryan is a unisex name by the way. If someone knows their date of birth, mother’s maiden name, the last 3 addresses they lived at, and a social security # who gives a damn who your talking to. I made an effort to wire funds over to them before 2. Well, it wasn’t good enough for the bitc**es working the loan department. They had me so heated up I have lost sleep over it. Now I’m waiting on my overnight to be delivered and for some reason I think they have screwed that up over spite. Go to hell Riverside National!


Bye Bye Honda, you were good to me for the past 3 years.

Thongs?

One thing you need to know for the story is my mom had a huge garage sale over the weekend.

I received a call from my mom tonight and she asked me a weird question...

Mom: Are you missing a pair of thongs?

I was like, what? Why are you asking if I am missing a pair of thongs?

Mom: Well, Joe and I found some and I was thinking you forgot them here.

Me: First, I only wear thongs if I'm wearing dress slacks that show pantie lines and usually when I'm visiting family I'm not dressed in slacks, I'm wearing comfortable clothes...I told her I could have had some that I had brought that slipped out of my bag...but hell, I don't remember if I'm missing a pair of underwear.  

Me: What color are they?

Mom: They are yellow and green.

Me: Yellow and Green, Where did you find them

Mom: I found them when I was still living in the condo..

Me: So you found some underwear of mine 3 years ago and your just now asking if I lost them?

Mom: Well, no my good friend Valaine got this jacket at the garage sale and she called and she found a pair of thongs in the pocket...and they are the yellow and green ones.

Me: Why were the thongs in the coat that was for sale at your garage sale?

Mom: Well I don't know who put them there...but Valaine is bringing them back to me this week.

All this time I was laughing thinking...mother why are you worried about finding the home of these old thongs...tell Valaine just to throw them away.  I could understand if it's someones diamond ring, but thongs...ha ha

Me: Well, to make you feel better take a picture of the thongs and send them to me, I will let you know if they are mine or not.

Mom: Don't you worry, I'm bringing them to Jaclyn's wedding :) 

I thought this was hilarious...I will post back and let you know if they are my old pantie's or a mystery women's...yikes mom! Just kidding! :) Love you mom!

Cuban Chicken Soup

We have this little cuban place I eat at atleast once a week.  Im addicted to the Chicken and rice meal, and the chicken soup.  The chicken soup recipe is below.  I love it!

You will need:

Package of Bone in Chicken (I like drum sticks & Breast)
5 Potatoes
4 Corn on the cobb
1 Onion 
3 Carrots
2 Celery ribs
GOYA Blue Top Seasoning (3 tlb or more..go by taste)
4 Garlic cloves
A pinch of Saffron (Optional)
A pinch Cumin
Salt to taste
Pepper
1 Bay Leaf-take out after soup is done
Fresh Cilantro Leafs (1/2 cup) Add at the very end
Juice of 1 lemon
Combine chicken and spices into a large soup pot and cover with cold water.  Bring to a boil over high heat, then reduce the heat to low and simmer uncovered for 1 1/2 hours...skimming any foam from the top of the stock.  You want the chicken falling off of the bone.  

Strain the stock through a fine mesh strainer, and return the stock to the rinsed out soup pot.  You can either take the chicken off of the bone, or leave on the bone.  Return chicken to the soup pot with the stock.  Add the chopped up onion, carrots, celery, potatoes, and corn (I cut the corn on the cob into 3 pieces and eat it off the cobe. (you can just had frozen corn) Add the remaining ingrediants except for the cilantro, and simmer until potatoes are tender.  Add cilantro at the very end.   
I'm not sure why Im addicted to this cuban place, but it is healthy and yummy!

Kentucky Derby

The only sport I enjoy watching is horse racing.  Yesterday's race was horrible, just like last year when Barbaro broke his leg.  The only Philly that was in the race broke her 2 front ankles, they euthanized her on the spot.  Tears came to my eyes and I started thinking that this was cruel.  I hate that happened and I can only imagine how the owners felt.

Man Talk

My husbands SUV has broken down AGAIN and he has been riding with me everywhere for the past week.  We don't mind since we work together...but tonight he had a meeting...and I had to go. Let me tell you, being the only women in a business meeting...I would call it "DICK TALK".  I swear men are worse then women.  They talk about fights, hookers, and drugs.  I felt like I was in a frat house.  Is this what meetings are all about because if so, I would like to go to all of them with you.  You wonder what goes on when I'm not there.  If there talking about hookers in front of a wife, I hate to see what they talk about when a wife isn't there.  We ended up leaving at 10.

Jim has an old friend in town and Im always excited to meet an old friend of his.  I always love hearing stories of his wild days.  Well, to make the story short, he is on his way to our house right now.  I know its 10, but he lives in Pensacola and he needs a place to stay since its on his way.  I will need some girl time soon!  Always love hanging out with the girls!  I will post tomarrow if anything exciting happens.  I wouldn't count on it.

Shorty?

So, I have been listening to a lot of Hip Hop & Rap lately, and if you knew me, you would ask if there was something wrong, because I have always been into alternative, not dance music. I got into my car the other morning and the song, Love in the Club was blaring on the radio, It made my morning. I’m not sure why my taste in music has changed but I can say it does help me clean the house.

This morning while in the shower I was thinking why do all these songs have the guy’s name Shorty in them? Shorty is in every rap song. I’m thinking to myself, is that the rapper that died? Are all these guys dedicating there songs to him? Jim walks by and I asked, Who is Shorty…you know the Shorty in all these rap songs. He looks at me like I’m stupid and say’s Shorty is another name for a women. What? Why haven’t I know about this…everything makes since now. Why would a women have a nickname as Shorty…I’m 5.8 that’s not to short. Jim said it’s because most men are taller than women. Couldn’t they have come up with a better nickname for a woman?

May, May be Hectic

The month of May is so action packed I’m not sure where I will do my laundry and pack enough stuff to last me. Bear is going to be so mad at his momma. This weekend is the weekend to get everything done around the house. I have to get my dress altered for Jaclyn’s wedding, find someone to water my garden and flowers, buy a new suit for the tradeshow, and the list goes on and on. We leave to Oklahoma next Wednesday for Jaclyn’s wedding. Its always nice going back home, but this time will be stressful. Wedding’s are always full of getting things done on the last minute, and I will be seeing a lot of high school friends, of which none of them have changed...except for most of them having babies, gotten married, divorced, or cheated on. Small town drama, it still goes on and now since they haven’t seen me in years, I will be the talk of the town, or at least until someone else gets cheated on or gives birth. I’m not sure why people in a small town act like they can’t get out, they always date in the same circle of friends, so by the time 5 years have past everyone has slept with everyone, it’s horrible, and I’m so glad that Jaclyn and I have gotten out of that place. We arrive on Wednesday and the last minute shenanigans begin. Jaclyn and I always have a great time together, someone could stick us in a box out in the middle of no where and we would still manage to have fun. The boys have a fishing trip on Skiatook Lake Thursday, Jim’s sure is excited, he’s ready to catch sum bass and catfish. The wedding is on Saturday night at a place called Wooloroc, it’s a wild life preserve, a rustic lodge, muesuem, and a place where buffalo roam. There is an art muesum with famous art sculptures and paintings; it’s a neat place to go if you’re ever in the town of Bartlesville. That night we get to stay in the Price Tower which is a high-rise that Frank Loyd Wright designed. The next morning my mom will pick us up and we will head to Eggbert’s and have a mother’s day breakfast. Eggberts will be the only thing open at the time, our plane leaves at 10 and Bartlesville is a good 2 hours a way so we will be on a tight time schedule.

Our next stop Las Vegas! For the World Money Show…we will be in Vegas until May 16. The nights are fun since it will be full of gambling and great food. It’s going to be a long week though; I hate standing in a booth for 9 hours straight. I complain about the trade shows but at least I get to travel and not set here at the desk all day. It will be a good time.




And last but not least, Jim's first Marlin tournment, which is a big deal. Its the last weekend in May, and its in Orange Beach, AL. I love Orange Beach, its white sands, and they have awesome shopping! YEA! :)
